Sayote with Chicharon

I don't like eating soft pork fat but I love chicharon haha.  It's been a habit to trim off the fat from raw pork cubes or raw pork chops and reserve it for vegetables.  Cooking it this way somehow lessens the guilt from eating so much fat.  I just used sayotes this time instead of a whole bunch of different veggies.  


What I used
  • pork fat cut into small pieces
  • water
  • rock salt
  • vegetable oil
  • 2 pieces sayote, peeled, cored and sliced
  • 1 Knorr pork cube


What I did
  • immersed the pork in water with rock salt. let it boil until the water ran out but stirred it every now and then.
  • added oil and covered the pan. stirred occasionally.  i made sure to turn off the heat before opening the lid.  i didn't want the oil to splatter on me.
  • drained the pork on paper towels and set aside.
  • removed most of the oil until only about a spoonful was left then mixed in the sayote.
  • added water and let it simmer.  tried to scrape off all the pork that stuck to the bottom of the pan.
  • dissolved the pork cube and waited until the sayote could be pierced by a fork.
  • transferred to a serving bowl and topped it with the crispy pork


The husband loved it so much that he said he could eat just this dish and rice.  I kept joking him that I would be preparing steamed or boiled food for the next few days since we consumed all of this.
