A great way to enjoy kare kare minus the oxtail (my least favorite part of this dish). I can eat rice with sauce and just bagoong (shrimp paste).
- 500 grams pork cubes without fat
- around 5 cups of water
- 1 pc knorr pork broth cube
- 3 cloves garlic, peeled and sliced thinly
- 1 onion, peeled and diced
- 2 eggplants, ends chopped off, sliced lengthwise then cut into serving pieces
- 5 long string beans, ends snapped off then cut into 2 inch pieces
- 1 pack mama sita's kare kare peanut sauce mix
What I did
- in a deep sauce pan, submerged the pork cubes in water and let it boil for about 45 minutes, threw out the fat that rose to the surface
- transferred some of the liquid into a cup and dissolved the pork broth cube then returned it to the pan and let it boil for another 15 minutes
- removed the pork and broth from the saucepan, i had about 3 cups of broth
- sauteed the garlic and onion in the same pan
- browned the pork
- poured in the kare kare mix which I dissolved in about a cup of pork broth
- returned the remaining broth to the pan
- when the sauce has thickened, added the eggplants and string beans, stirred continuously
- added a few spoonfuls of water when the sauce was too thick
This was a very easy instant dinner if you don't count the long boiling process. The meat came out very soft and the sauce was thick and peanuty. It smelled heavenly too. I would add more sauce next time and dissolve the kare kare mix very well before pouring it over the pork. I would also add more vegetables and maybe even try cooking it with some oxtail and beef used for stews.
